Smashed ‘taters

A classic dish and hit for any occasion. Easy to make, even easier to eat way more of than you should.

4-lbs organic yukon gold potatoes
1 stick (1/2 cup) Earth Balance Vegan Butter
1.5-cups flax milk (or preferred milk alternative)
salt & pepper to taste
Serves: ~ 8
  1. Fill large stock pot with water and boil
  2. Wash and halve potatoes and boil ~30 minutes or until tender (can be easily pierced with a fork)
  3. Drain and dry potatoes over low heat to burn off any remaining water
  4. Mash taters until mostly smooth. I like to keep it lumpy but to each their own
  5. Stir in milk and melted butter
  6. Season with salt and pepper to taste
