Meaty Meatless Chili

like a warm hug on the inside ❤

chili

2 tbsp extra virgin olive oil (EVOO)
1/2 onion, diced
4 tsp minced garlic
4-oz canned green chiles (fire-roasted are best, e.g. Trader Joe’s brand)
29-oz canned tomatoes (fire-roasted or seasoned are best, e.g. Muir Glen brand)
4 tsp chili powder
1 heaping tsp each: cumin, oregano, onion powder, garlic powder, black pepper
2 tsp salt
1 cup veggie broth
2 15-oz cans beans, undrained (e.g. Westbrae brand: kidney, pinto, black, chili mix, etc…)
1 12-oz package Trader Joe’s Meatless Ground Beef

  1. Add EVOO, veggies, spices & veggie broth to pan and sauté on medium heat for 5 minutes.
  2. Stir in tomatoes & beans and simmer on medium heat for 30 minutes. Stir every 5 minutes or so.
  3. Add ground “beef” and simmer 10 more minutes.
  4. Wah-lah!

VARIATIONS:

#1 – Green it up: Add 1 6-oz bag of kale, super greens, spinach etc… to sauteed veggies and stew 2 minutes before adding in the tomatoes and beans. Add a couple more dashes of salt and pepper.

#2 – Green it up PLUS add 1 red bell pepper. Saute with other veggies in step 1. Add more salt and pepper to taste.
